Cupcakes

Easter holidays so while baby girl has a nap, me and the boy make cup-a-cakes (that's how he says it). We half followed this recipe http://www.bbc.co.uk/food/recipes/cupcakes_93722 but ended up with two and a half eggs so added 150g of sugar/flour and butter - more cakes, win!

The ingrediants call for vanilla extract but we didn't have any (or cocoa powder) so I just chucked some hot chocolate mix in there

Chicken and apple Quesdilla

I followed a recipe for chicken and apple Quesadilla today for lunch, which was very tasty but following the method supplied, fell apart:

So I have adapted the recipe and method below (Serves 1 adult and one to two kids -with fruit side plate!):

Ingredients:
2 Flour Tortillas
3 tablespoons of salsa
1/2 apple finely diced
3 tablespoons of grated cheese
2 to 3 tablespoons of ready cooked chicken (I used a packet of BBQ chicken breast which was lush with the apple)

Method:
Heat a frying pan on medium, add one tortilla and spoon the grated cheese into the centre, wait until cheese starts to melt.
Add chicken and spread the cheese out toward the edges (leaving at least 1/2 inch at edge).
Mix apple with salsa while chicken is warming, checking tortilla is brown on underside, if it is add the apple-salsa mix and flip.
Cook on medium for two mins until underside is brown, flip onto plate and cut into triangles.

Serve with mixed fruit salad.

N.B. Excellent cold for lunch boxes and picnics
Another N.B. You could always make a batch of this by mixing all of the fillings together. Then you have something on hand to make a quick after school snack

Football Snack

M is watching a football match on TV so I thought I would try a snack out on him I saw today on some blog's I was looking at. Mayo fried cheese toasty (grilled cheese). I only had roasted garlic mayo, but that worked well with the spring onions and the crispiness of the coating wasn't much different than butter, but the flavour was nice and spreading mayo is alot easier than butter any-day. It's a keeper!
Looks like a normal toasty, right?

Ingredients - you have to have spring onion! (or Branstons relish, nom)

Dinner

 The Quorn worked really well, I cooked it on a tray in the oven for 15mins and it was nicely glazed. It's a good product for quickness, you can cook it straight from the freezer.

Looking forward to more of this rice tomorrow in burritos with the kids

Watermelon salsa

So watermelon salsa is a thing! I've found two recipes which look great and I made my own by adapting these and what I had in, no coriander/cilantro though, boo!

I loves me some coriander!

What's for dinner? Quorn steaks, Mexican rice and watermelon salsa.
This (well part of this) will be a watermelon salsa, which I haven't heard of but I have heard of  mango and blueberry salsa so I am thinking anything goes!

Spanish / Mexican Rice


This is Quorn, a fake chicken breast thing, which I have marinated in a mango and chilli marinade, I haven't tried doing this before with Quorn but I had no chicken and this was in the freezer.

Mint Oreo Awesomeness

So, I made Ben and Jerry's Oreo Mint and it is so good! I added a bit of food colouring to give it a mint colour but with the Oreo dust it went a horrible 'hospital wall' green/grey. Would have been better just leaving it white!
 Finished product, yep that sludgy grey box in the centre is the BOMB!
